Good Things to Drink with Mr Lyan and Friends
Hot Buttered Rum is an esteemed and ancient cockle-warmer that teams
spice with the richness of melting butter. Here I’ve switched to a lighter
version, dispensing with the grog and bringing in gin, cider brandy and
hard cider to lift the drink. Using butter might seem weird, but it supplies
a truly lovely savoury edge.

  • Step 1

    Method
    Place the cider in a pan and gently
    warm up.
    Add the cider brandy, gin, honey and
    lemon juice to your cup. Mix, then top
    with the hot cider. Cut off a twist of
    lemon peel and add it, then drop in
    a pad of butter.

  • Step 2

    Magic
    To make a simple flavoured butter,
    allow it to soften slightly, then fold
    spices, finely sliced herbs or citrus in,
    then chill to set again. The infusions
    will end up in your mug as the butter
    melts, of course, so stick with less
    ‘bitty’ spices.
