In a separate bowl mix together the oil, egg, almond extract and sugar.
Sieve the flour, salt, baking powder and baking soda in to a third bowl.
Combine the oil mixture in with the bran mixture and then mix in the flour mixture and raisins.
Fill muffin cases with 2 tbsps of the mixture and then bake in an oven for 25 minutes at 190. Leave to cool and then spread with honey and sprinkle some porridge oats on top.
These look great...but is it really 1.5 tsp of bran? Maybe 1.5 cups? I plan to try!

I made mine with whole wheat flour, kosher salt and vanilla extract, no raisons. the honey and oats make a perfect toppings.
they are very delicious,
