I was going to make my 'bumpkins' from last year, but decided to make something a bit more exciting...The pumpkins are filled with a black Chambord jelly and the monsters are filled with red jelly with raspberries for 'brains' in the top of the fruit.
Cut the tops of lemons, limes and oranges and hollow out. Keep the pulp and juice for the jelly...! Using a craft knife carve out eyes, nose and mouth into the fruits.
Heat Chambord, Elderflower, Orange juice and Vege Gel in a pan until boiling point. While it heats, line the carved fruits with cling film...then pour in jelly! For the 'brains' squish some raspberries, place them in the top of the fruits and set with a little jelly.
Allow to set in the fridge. Then trim away excess cling film and add additional decorations using rolled icing and chocolate and coloured icing gels. Keep in the fridge until needed!
