gluten's the protein in wheat, rye, and barley (similar to lactose in milk), which a significant portion of the population is intolerant to. like me :) so I have to avoid all regular flours, cookies, cakes, pasta, bread, etc. I end up doing a lot of cooking myself because of it.

Hey how did you get your cookies so thick? Every time I make homemade gf cookies they are either flat or thick but fall apart so eaisly and I don't like box recipe gf cookies.
