Great easy Caramel Tart
these are some easy puff pastry based caramel tart

  • Step 1

    Cut puff pastry to size and place in mini or not mini muffin tins, spray with spray and cook .

    place in the oven at 250C with something in the middle to hold the puff down! i used marbles in foil but there are such things made for this , i just don't know what they are or what there called

  • Step 3

    Place the condensed milk and golden syrup in a saucepan over medium-low heat and cook, stirring constantly so the mixture does not catch, for 5 minutes until light golden and thickened. Set aside to cool slightly, then place a teaspoon of the caramel into each tart shell.

  • Step 4

    Cool and eat!

Those look great! The items you are talking about to hold down the pastry are called pie weights. However, you can cover your pastry with foil or parchment paper, then put dried beans on top for the same effect and probably much cheaper. Although you can't eat the beans after you are done, you could store them and use them over and over for this purpose.
