Using a bowl, mix equal parts Italian bread crumbs and grated Parmesan cheese.
Take your chicken breast (I cut the meat into strips to make this easier) and spread mayonnaise on both sides of the strip/fillet/whatever.
Place each piece of chicken into the bread crumb-cheese mixture and coat both sides. The mayonnaise makes this stick and keeps the chicken nice and moist while it bakes.
Place your chicken into a greased glass baking dish, uncovered, into a 425 degree oven for about 35 minutes.
Serve on top of spaghetti and marinara sauce, or with fettucini and alfredo sauce. Its delicious, moist, and so very easy!
