Boil chicken breast until cooked. Remove from water, and season with a bit of salt and pepper. Let cool, and then cut into bite size pieces.

Take at least 1 cup of the cole slaw mix and put it in a bowl, and top with cut up chicken.

Add peanuts (or cashews) and dressing (to your taste) and toss or shake in a closed container, until dressing is mixed in well.

Optional: top with mandarin oranges and/or crunchy wonton strips.
(Bean sprouts would probably be good, too!)
Eat!

I made another version...'buffalo style':
Grill chicken on the foreman grill, and add Frank's Red Holt Buffalo sauce...cut up and put on top of cole slaw mix. Add light Ranch Dressing and shake/toss it...eat!
