Cheap and healthy alternative to salty canned soup
I love split pea soup, but since I'm vegan it can be difficult to find good soup without bacon or cream. This is a easy option that tastes very elegant. Bonus the dash of Extra Virgin Olive Oil is amazing for reducing bad omegas and lowering cholesterol.

Sorry I didn't take pictures of the steps, I wasn't expecting it to turn out so yummy!

You Will Need

  • Step 1

    First gather your ingredients:
    2 cups dried split peas
    5 cups water
    2 cups vegetarian broth (chicken broth optional)
    Half a large onion
    Extra Virgin Olive oil (EVOO)
    Paprika
    Salt & Pepper

  • Step 2

    Saute your onion until caramelized, about 2 mins.

  • Step 3

    Once your onions are done add your split peas, and water.
    Cook on med. heat about 20 mins. or until tender.

  • Step 4

    Once pea mixture is at desired consistency, scoop 5 cups into blender. Blend until almost smooth. Mix with remaining pea mixture.
    Add veggie or chicken broth and allow a minute for the flavors to meld.

    Salt & Pepper to taste. Garnish with a drizzle of Olive Oil and paprika. Congratulations you have made split pea soup!
