You will need : ( this recipe makes six cupcakes )
4 tbsp All purpose flour
3 tbsp sugar
about 3 tbsp butter
half tsp baking powder
1/4 tsp soda-bi-carb
a handful of choco-chips
2 tbsp milk
zest of an orange zest
3 tbsp coco powder
For the icing :
4 tbsp icing sugar
1 egg white.
Step 1 :
Beat your butter and sugar to a fluffy consistency.
Add your egg and milk to this mixture.
Whisk away for about 3 minutes.
Add your dry ingredients in a bowl and sieve it into the mixture.
Add orange zest and choco-chips to it.
Whisk it for about a minute.
Step 3 :
Preheat you oven to 180'c
Line your cupcake molds with cupcake paper cups.
Spoon your mixture into it. About 2tbsp in each.
Bake for 15 minutes.
Step 4 :
Let your cupcakes cool completely.
In a bowl , whisk your egg white and sugar till its nice and foamy.
Put your bowl on a double boiler and whisk for about 3 minutes.
Step 5 :
Get your cupcakes out of the mold and using a knife apply your royal icing to it and make swirly patterns.
Add extra choco-chips or orange zest on top.
