Simple yummy muffin recipe ^_^

I had so much zucchini left over from my garden this summer that I found this to be a great way of using it up. My hubby and children love these and they freeze well, so I freeze the extras and defrost for a quick breakfast snack on the run. And the loaves are great to give to family and friends.
This recipe makes 24 muffins or 2 loaves of bread. In my case I only have 2-6ct muffin pans so end up making 12 muffins and 1 loaf.
Hope you enjoy making and eating these as much as I do :)
