Every time I visit a Panera or Einstein Bros. bagel sho I drool over all of the fancy cream cheese spreads they offer. Instead of spending the cash on fancy spreads in the shop, you can create your own!

  • Step 1

    For each of these recipes, make sure your cream cheese is at room temp to make the blending easy. You want the ingredients to be well combined. I mix mine in a little chopper (mini food processor) but a bowl and spoon will be fine! I've made all kinds of versions, but these are my favorites:

    Reduced Fat Hazelnut Spread

    1/2 tsp orange zest
    1/2 tsp. vanilla extract
    1/4 cup hazelnuts, chopped
    Just blend together!

  • Step 2

    Reduced Fat Sundried Tomato Spread

    16 oz. reduced fat cream cheese
    pinch of salt
    1/4 cup sundried tomatoes, soaked in hot water for ten minutes, then chopped
    1 garlic clove, chopped
    Just blend together!

  • Step 3

    Kalamata Olive spread

    16 oz. reduced fat cream cheese
    pinch of salt
    1/4 cup kalamata (Greek) olives, chopped
    1/8 cup roasted red pepper, chopped
    Just blend together!

You can add fruit spreads, a.k.a. jams, jellies, or marmalade, for a sweet version. I like strawberry myself.
