  1. Step 1

    Preheat oven to 350 and grease 6 ramekins.



  2. Step 2

    Stir 2 c. sugar and water over high heat until sugar dissolves.


  3. Step 3

    Bring to a boil and reduce to a simmer (Do not stir!).

  4. Step 4

    Cook until sugar turns golden and thickens (I repeat: Do not stir it!).


  5. Step 5

    Pour equal amounts of caramel into ramekins and set aside.

  6. Step 6

    Beat eggs, add all remaining ingredients and beat.

  7. Step 7

    Pour equal amounts into ramekins.

  8. Step 8

    Place ramekins into a large baking dish and fill with water until it reaches halfway up the sides of ramekins to make a water bath.
    Bake for 45 minutes.

  9. Step 9

    Remove and cool to room temperature.
    Chill for at least 3 hours before serving.
    * To serve, run a knife lightly around the edge and invert onto plates, garnish with lemon twist.
