A sopapilla is usually just a crispy, puffy, deep-fried pastry that is served with honey or syrup. But in this recipe, the dough (crescent rolls) is filled with a cream cheese mixture, sprinkled with cinnamon and sugar, and baked in the oven.
A sopapilla is usually just a crispy, puffy, deep-fried pastry that is served with honey or syrup. But in this recipe, the dough (crescent rolls) is filled with a cream cheese mixture, sprinkled with cinnamon and sugar, and baked in the oven.
Preheat oven to 350°F.
Cream together cream cheese, egg yolk, vanilla, and 3/4 cup sugar.
In a 9x13 Pyrex (or glass) dish, roll out one of the crescent rolls on the bottom of the dish.
Then spread the cream cheese mixture on top of the rolled out crescent roll.
Next, take the second roll of crescent rolls and roll it out and place it on top of the cream cheese mixture.
Sprinkle with cinnamon and remaining 1/2 cup of sugar. Note: I usually mix the cinnamon and sugar together before I sprinkle them on top.
Bake in oven for 30 minutes. Let cool for a few minutes and then enjoy!
