  1. Step 1

    Step 1

    Mix together the polenta, flour and baking soda in a bowl.

  2. Step 2

    Step 2

    Mix together the milk, melted butter and sugar.


  3. Step 3

    Step 3

    Mix the wet and dry ingredients together, place in a greased baking tin and cook in an oven for 30 minutes at 200°C.

That one is close to mine, except I use buttermilk instead of plain milk. And a hotter oven.

Also, try whizzing frozen corn in the food processor until it's a paste and add it in for extra corn flavor without chewy kernals.

(Of course, real southern corn bread wouldn't have any sugar, eggs, or wheat flour. Personally, I'm non-denominational when it comes to cornbread. Or BBQ, for that matter.)
