A woman was selling something similar to this in NY, my mom & I decided to make our own yummy version.

  1. Step 1

    Step 1

    You will need:
    1-15 oz. can Cream of Coconut
    1-11.8 oz. can Coconut Water
    1/2 cup water
    1/2 cup sugar (can use sugar substitute)
    1 tsp Vanilla extract (imitation is fine)
    3-12 cups you can freeze - the size of the cups will determine how many you need (I bought large heavy plastic cups that can be taken to go)

  2. Step 2

    Mix all ingredients (except cups- haha) together in a bowl with a side spout you can pour from (or use a ladle, if you do not have this type of bowl). Stir until you are fairly sure all the sugar is dissolved.


  3. Step 3

    Step 3

    Pour into cups & place in freezer on a level area that will not be disturbed for a while. I chose the door panel)

    You may also freeze this in a single bowl. I just prefer individual servings.

  4. Step 4

    Freeze until solid & enjoy! Just remember, the larger the amount you're freezing, the longer it takes. So, small cups would freeze faster.

I also would like to add that if you want to, you can add shredded coconut. I like mine smooth, but it is an added bonus if you'd like. I'm sure you'll like it as much as we do.
