Description

I wanted to make a naughty or nice macaron tree for our Christmas party, so I made white chocolate macarons for the good guests and coal ones with dark chocolate for the bad.

Instructions

  1. Small 2018 01 22 121309 img 3107

Whisk together the ground almonds, cocoa and charcoal in a bowl.

  2. Small 2018 01 22 121325 img 3109

Tip the mixture into a blender and grind into a fine powder.

  3. Small 2018 01 22 121342 img 3111

Tip into a sieve above the previous bowl.

  4. Small 2018 01 22 121410 img 3114

Sieve back into the bowl, to get a super fine mixture.

  5. Small 2018 01 22 121430 img 3113

Separate the eggs and whisk the egg whites until they form soft peaks. Add the caster sugar, a little at a time, and whisk until the eggs form stiff peaks.

  6. Small 2018 01 22 121512 img 3115

Add half of the charcoal mixture then fold in.

  7. Small 2018 01 22 121525 img 3117

Fold in the remaining charcoal mixture and then scoop into a piping bag.

  8. Small 2018 01 22 121544 img 3120

Pipe out 24 circles onto baking paper of a macaron mat, bang against your counter to remove any air bubbles and then leave for 30 minutes to form a skin on top. Bake at 150'C for 12 minutes and leave to cool.

Fill with dark chocolate ganache, or any filling you like and serve to your Christmas party guests!
