Step 1
Sift the flour and icing sugar together and rub in the butter. When the mixture starts to come together, add in the cream and vanilla essence.

Divide the mixture in half and add cocoa powder to one half of the mixture. Knead the seperate doughs lightly until smooth.

Mix small amounts of dough together and roll into 4-cm-wide logs. refridgerate until firm.

Step 4
Preheat oven to 190 degrees celcius. Take out logs and brush with egg white and sprinkle with sugar.
Cut into 6-mm thick slices and place on baking sheet. Bake for 8-10 minutes.
Cool slightly before serving.
