Mmmm it's time for dinner
This a bit of a version of another recipe that I make quite a bit, but this one requires a little less time and is oh so good. A quick and easy dinner, though I have to admit I'm not sure where my mom got this recipe from but it's really good.

    Get out all your ingredients together. I start with chopping the garlic and olives.

    I finely chop my 3 cloves of garlic, and then just coarsely chop my olives.

    Wash your Tomatoes. I happened to have these nice ripe grape tomatoes handy tonight.

    I chop the Cherry and/or Grape tomatoes in halves. If some are larger I cut them in thirds. But if I use the plum tomatoes, I boil them for a minute in water, and peel the skins and chop.

    Start up your stove and in a large skillet pour your 3 TBS of Olive oil.

    Add your chopped garlic and olives and start heating up until golden.
    If you want, you can add some chili pepper flakes if you like it spicy) I did.

    Meanwhile while waiting, start filling your large pot with water for your pasta. I added some salt in the water. This adds flavor and supposedly makes the water boil a little faster. So because I do this, I don't add salt in the sauce unless for garnishing later if needed, but while making the sauce, I don't add the salt. It's already in the water.

    While your cooking because someone is hungry and giving you the I'm hungry look, get their food ready as well.

    Ok, cat fed, back to dinner:
    Now once your garlic is nice and golden and you can smell the aroma, add the tomatoes and cover.

    While your water is boiling, bring your heat down for the sauce to medium and cover. If you have a REALLY OLD stove, (like I do) and just numbers, stick with number 3.

    Once your water is ready, add your pasta and follow the timing specifications to the box. This says 11-12 minutes, I went with 11 since my thermostat on my stove is pretty hot.

    While your pasta is cooking, stir your sauce and bring that down to number 2. Low heat. Keep covered until your pasta is ready.

    After the 11-12 minutes are up turn everything off, drain your pasta and add your sauce and toss.

    On your plate you can garnish (to taste) with salt, grated parmesan cheese and if you want, more chili flakes.
    Serve hot and enjoy your dinner.
