Used exactly the same recipe just made mini cupcakes :-) Not a big fan of carott cake, made them for my fella but they tasted great :-)
Couldn't get hold of proper cream cheese for the frosting, so used philadelphia instead, was a bit runny but tasted ok :-)
My fella loves carrot cake and said this recipe made perfect carrot cake :-)
