Carrot & Lentil Soup
Easy to make & tastes great.
This could be made full vegetarian by using veg stock instead of chicken.

Step 1Heat the stock up.
Add the lentils.
Cook for 15 mins until the lentils are softened.

Step 2Add the grated garlic & ginger to the pot.
Allow to cook for a few mins.

Step 3Grate the leek & add to the pot.
Cook for a few mins.

Step 4Grate the carrot.
Add to the pot.
Cook until all vegetables are cooked through.

Step 5Serve with crusty bread.
