Step 1Heat oven 160/ gas 3.
Mix butter, honey & egg together.

Step 2Stir in butternut squash.

Step 3Mix sugar, flour & spices together.

Step 4Mix all ingredients together.

Step 5Pour into tin.
Sprinkle the top of the cake with the 2 tbsp Demerara sugar.
Bake for approx 1 hr.

Step 6Remove from the oven & allow to cool.

Step 7Top with butter cream icing.

Step 8Serve.
