Bruschetta

Have a party with some fussy eaters? Everyone loves bruschetta.. I think.

  1. Step 1

    Step 1

    Cut a baguette in to short slices and brush the top sides of the bread with olive oil and grill in an oven for 7 minutes.

  2. Step 2

    Step 2

    Finely chop the tomatoes and the basil, place in a bowl and mix in the remaining olive oil and the minced garlic cloves.


  3. Step 3

    Step 3

    Remove the bread from the grill when toasted and rub the top with a garlic half.

  4. Step 4

    Step 4

    Place a small amount of the tomato mixture on top of each slice of bread and serve.

in Italy we use to put the bread slices without oil on the grill...then we put olive oil and other ingredients!!

update: I made it as one of the hor'dourves at Peter's birthday party this weekend and it was a hit. People started asking what was cooking when I rubbed the garlic on. I tried one before I served it and man was it tasty.

It had this cool peppery taste with crunch. I am so making more for me. Seems pretty healthy too.
