Yummy delicious lemon bar recipe I was given

A friend shared this recipe with me after lots of bugging about her lemon bar recipe that was super awesome! I thought EVERYONE should get to enjoy this awesomeness!!!!

Not to mention it's a double recipe~

  1. Step 0

    Preheat oven to 350

    Have two (that's right 2) 9x12 baking pans ready (no need to grease)

  2. Step 1

    Making the crust:

    Put 1 1/2 cups of COLD butter, 3/4 cups of sugar, and 3 cups of flour in a bowl and use a pastry cutter or fork to mix the ingredients. The mixture won't be smooth and you should be able to see pea sized pieces of butter. Now, split the dough in half putting the portions into the two pans.

    **Tip: I like to use a piece of wax paper and another pan on top of the crust to flatten it evenly on the pan**

    Now bake both pans for 15 minutes (it definitely won't look fully cooked)

  3. Step 2

    While the crust is baking start making the lemon part.

    Add the following ingredients into a bowl (no need to mix in between adding the ingredients):
    *5-6 eggs (I say 5 to 6 because that's what my friend told me...I just figure it had to do with whether or not you have large eggs)
    *3 cups of sugar
    *3/4 tsp salt
    *2/3 cup lemon juice
    *1 1/2 tsp baking powder
    *6 tbsp flour

    Whisk together until combined (Don't over mix)

    Distribute evenly among the two pans and bake the two pans for another 30 minutes (check on it in the middle in case the heat in your oven isn't evenly distributed so they brown evenly)


  4. Step 3

    Let the pans cool until fully cooled to sprinkle with powdered sugar...you don't need a lot just enough so it looks pretty.

    And eat

    *Tip: if you are too impatient to wait for it to fully cool you can wait till it's just a little warm still and cut your own piece and cover in powdered sugar...you don't want to put the sugar on too early or else the moisture on the surface will dissolve the sugar and it won't look as pretty/tasty*
