  1. Step 1

    Preheat the oven to 350°F (175°C). Beat the egg then mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. For extra fanciness I sometimes add a 1/2 tsp vanilla essence, and a pinch of nutmeg and cinnamon. You can even replace a banana with some apple sauce or a grated apple. If you add chocolate chips use 1/4 cup less sugar.

  2. Step 2

    Preheat oven to 350°F. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.
