Banana Bread W/ Peanut Butter Chips

Supermoist banana bread with a peanut butter twist!

I actually don't like banana bread, or anything banana really except for fresh bananas... but I had some overripe ones laying around and a bunch of friends who do, indeed, like banana bread so I decided to make it with a bit of a peanut butter flavor, because what goes better with bananas? I admit, I tried a piece and it wasn't too bad... but just not my cup of tea.

    (Preheat the oven to 375˚)

    Here are all the ingredients laid out:

    Banana Bread with Peanut
    Butter Chips

    Ingredients:

    • 2 cups flour
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup butter
    • 3/4 cup brown sugar
    • 2 eggs, beaten
    • 2 1/3 cups mashed overripe bananas (I ended up using about 4)
    • 1/4 peanut butter chips (or more if you want)

    Cream the butter and brown sugar in a bowl, and prepare the dry ingredients in another smaller bowl (flour, baking soda, & salt)

    Add the eggs, one by one, to the butter-sugar mixture

    Add the mashed bananas and mix thoroughly.

    Add the dry ingredients and fold them in about 1/2 cup at a time.

    Stir in the peanut butter chips. Note: you can use any kind of chocolate chips or whatever, but peanut butter and banana go together quite nicely.

    Sidenote/TIP: To prevent all the chips falling to the bottom, coat them in flour first (this bread is a pretty thick batter before being cooked, but this tip works well when making brownies or cakes).

    Place the mixture in a greased loaf pan and put it in the oven for about 50 minutes. I left mine in for an additional 10 minutes I believe. Just use a cake tester / toothpick ... and when it comes out clean, it's done
