Suprisingly easy and turned out great, give them a go!
Great recipe for using up those over ripe bananas.
Cooking time does not include cooling time.

Turn oven onto Gas mark 4, 180 deg c or 160 deg fan oven.
Place muffin cases into tin.

Place marg into pan and melt, once melted take off the heat and leave to cool.

While marg is cooling, sift the flour, bicarbonate of soda together in a bowl.

In another bowl mash the bananas with a fork then add the caster sugar, egg, milk and the melted marg.
Mix well.

Add the banana mixture to the bowl with the flour and the chocolate.
GENTLY stir using as little stiring as possible - just enough for the flour to be combined.
Mixture will be LUMPY.

Spoon mixture into case, half fill each.
Bake in the oven for 20 minutes or until they are golden and nicely risen.

Place on a wire rack to cool.
Eat warm or cold.
Great for breakfast on the go or for the lunch box.
