The Homegrown Paleo Cookbook
This simple yet delicious recipe takes just a few minutes to make and is my absolute favorite way to prepare bok choy. We grow a ton of Asian greens on our farm. They are easy to grow and incredibly nutrient-​dense. All you need is some protein on the side to turn this into a fantastic, simple weeknight dinner.

Notes: If bok choy is hard to find, try using shredded savoy, green, or napa cabbage.

  • Step 1

    In a large skillet over medium-high heat, warm the coconut oil. Add the onion and cook for 3 minutes, or until the onion begins to soften.

  • Step 2

    Stir in the curry powder and cook for another few minutes, until well incorporated.

  • Step 3

    Add the bok choy and cook until wilted, about 5 minutes.

  • Step 4

    Add the fish sauce, coconut aminos, and coconut milk. Cook for just a few more minutes, then garnish with the cilantro and serve.
