I found this recipe on the back of an oatmeal container so I can't take all the credit. But it's a delicious recipe that is even more wonderful when served with ice cream. I just thought I'd share it with the masses =)

I found this recipe on the back of an oatmeal container so I can't take all the credit. But it's a delicious recipe that is even more wonderful when served with ice cream. I just thought I'd share it with the masses =)

Instructions

  1. Preheat oven to 375 degrees fahrenheit. Lightly oil your baking dish.

  2. (FOR THE FILLING) In a large bowl, toss the apple slices together with the dried cranberries (or not), maple syrup, lemon juice, vanilla extract, 1/2 tsp. of cinnamon, and nutmeg. Spread evenly in the baking dish.

  3. (FOR THE TOPPING) Prepare topping by mixing the oats, brown sugar, flour, 1 tsp. cinnamon, and salt together. Add the melted butter and stir until evenly moistened. Sprinkle evenly over the fruit.

  4. Bake for 35-40 minutes or until the fruit is tender. **Remove from oven and let rest for 20-30 minutes. Serve with vanilla ice cream or whipped cream and enjoy!
