150g Self Raising Flour
100g icing sugar
Makes about 12 cupcakes
First melt 150g butter in the microwave until almost like liquid, then add the sugar and whisk until thick and all sugar is mixed in.
Then whisk in the tree eggs one at a time until all blended in.
Cut the lemon in half and set half aside. The other half squeeze the juice out using a juicer. whisk into the mixture.
Using a spoon gently fold in the flour trying to keep as much air in as possible.
Place into cake cases and bake on 220 degrees for 20 minutes.
Remove from oven and place in fridge to cool.
For the icing mix the icing sugar and the rest of the butter together until completley mixed. Then add in the lemon juice and mix thoroughly.
Spoon icing into an icing pipe(optional; you could just spoon it on) and decorate cakes.
Add decorations and place back in fridge to cool.
