Almond Biscotti

  1. Step 1

    Step 1

    Blend together the eggs, vanilla and sugar.

  2. Step 2

    Step 2

    Mix the flour, baking soda and salt together in a bowl.


  3. Step 3

    Step 3

    Toast the almonds in a dry frying pan for a minute or so until they are golden brown.

  4. Step 4

    Step 4

    Mix in the wet egg mixture in to the dry ingredients.


  5. Step 5

    Step 5

    Mix in the toasted almonds.

  6. Step 6

    Step 6

    Roll the dough out on a flowered surface and roll in to three separate loafs. Place on a greased baking tray and sprinkle with sugar.

  7. Step 7

    Step 7

    Bake in an oven for 30 minutes at 400°F. Leave to cool and then cut the loafs in to diagonal slices about an inch thick. Return to the oven for another 15 minutes.

expensive to get sliced almonds can i use substitute or have to add addition to all ingredients if there is a change in almond

You don't have to use almonds, if they are too expensive. Try another nut as a substitute, or use something completely different like chocolate chips.
