We had a rather disasterous attempt at making these tonight. I suggest that you don't try this without a candy thermometer. Some things just don't work when you wing it!

For the older kids, you can buy absinthe online. A number of places stock it, <a href="http://www.lafeeabsinthe.com/">La Fee</a> is one that will ship to the US.
Hmm, you could perhaps try some aniseed or licorice flavouring, if such a thing exists. Try different flavourings though, you can use any - strawberry, cherry, vanilla. Otherwise, I guess you'll just have to wait until you're old enough.

I tried to make this last night, but only managed to make a big hunk of browned sugar. It's soaking in my sink to try to get it out of the pan. Would you suggest putting it over high heat to cook? I couldn't get it up to the 300 degrees until I cranked the temp up, so I think it boiled too long. I'd love to have these done for a halloween party this weekend. . . Thanks.
I think it's best to heat it on a medium flame and gradually bring the temperature up. It's really important that you remove it from the heat as soon as it reaches the hard crack stage, using a confectionary thermometer should help.
Hey Courtney, if you want to get the same absinthe taste, you could use some kind of aniseed flavoring, licorice flavoring would work well too. You can use this recipe and substitute the absinthe for any kind of flavoring you like.
This is cool, I have some absinthe here but I don't think I can waste it on making lollipop, it was about a 100$ a bottle...
Maybe I can use it to make some whiskey lollipop - would tat work?

just wanted to make sure so i don't waste anymore, by 5 shot of absinthe, do you mean 5 ounces? and by a 1/4 cup of cream of tartar do you really mean a teaspoon? i tried this recipe a few times with margarita mix, but unfortunately it didn't work, possibly because it's juice and not alcohol.
Awesome idea, I don't like the taste of Absinthe but I will make these with Gin for my friend, she does like Absinthe so maybe I will try to make them after all come to think of it...

Here in the states, some liqueur stores do have a Absinthe flavored liqueur. Not quite the same, but you at least get the flavor.
