Making pasta with some ready-made pasta sauce is also a good option. To make pasta, you need to boil water in a large pot, adding a teaspoon of salt to it. When boils, add the pasta, I think half a pound spagetti or other should be enough for the three of you. Don't worry if the ends of the spagetti are sticking out, they will sink when the pasta starts to soften. Boil for about 15 minues, stir a couple of times. Drain in a colander. You can cook some veggies (broccoli, carrot, etc.) together with the pasta to make the sauce richer.
You can oven-bake some meet. Again, you can use pre-mixed spieces if you are unsure what to add. I love greek spice mix!
How to do that depends on the type of meet. (You can find info online of course. My experience is that chicken or other poultry is the easiest and quickest too.
Cook potatoes: Start with 5-6 medium sized potatoes, peel,cut to 1 inch cubes, put into a large enough pot to be able to cover with water, add a pinch of salt and boil until you can brake it apart with a fork. Drain. Taste and add some more salt if needed. You can mash it too.
Salad: what I do when I don't have time or inspiration is to chop up some veggies, sometimes only lettuce and sprinkle with balsamic vinegar. You can add some mayo if you like it.
