    I would carefully loosen/cut out all the pages. Then I would punch holes in the pages and attach rings like these:



    They come in different sizes and you should be able to find them in a scrapbooking store.

    Perhaps think what would go nice with the basil pesto - and include 1-2 recipe cards? If she enjoys cooking you could perhaps make her a fun apron? Or what about making her some earrings or maybe a necklace - if she wears jewellery?

    I think you'll have to unravel it up to the point that it fits and then you'll have to increase the amount of stitches for each round.
    Do you have a link to the pattern - it might be easier to help you if I can see what the pattern says.
