Vegetarian Cooking Ebook

Hello lovelies, I am thinking about writing a vegetarian recipe e-book and I would love to know your favorite recipes! I have been a vegetarian for almost 10 years and still struggle to find simple nutritious recipes that actually taste good!
Let me know if you have any great recipes or ideas on how to make an awesome book!

this is the recipe I create. the patty is half-meat half-tofu but also tastes great just with tofu (note in recipe included). so shortly its a veggie burger recipe.

Here's a favorite I've been making lately. It's vegan and yummy:
Sweet Potato Peanut Stew
2 T canola oil
2 red sweet peppers chopped
1 large onion chopped
6 cloves garlic minced
2 T grated ginger
1 t ground allspice
2 lbs. sweet potatoes, peeled and chopped
4 C vegetable broth
1 6oz can tomato paste
1 14 oz can coconut milk
1 C peanut butter
Pinch cayenne pepper

HEAT canola oil in 4 to 6 qt dutch oven or medium heat

ADD peppers, onion, garlic, ginger, allspice, and a pinch of cayenne pepper Cook 5 minutes on medium heat

ADD potatoes, broth and tomato paste. Bring to a boil. Simmer covered 40 minutes

WHISK together coconut milk and peanut butter until smooth. Stir in stew. Simmer 5 minutes Cooking

And I've been a vegetarian for 21 coming on 22 years! It's not easy but it has gotten much more doable in recent years. When I first became a vegetarian, you were lucky if you could get a salad and baked potato when you went out. Now there's usually an option. Probably only one but it's still better. Plus more vegetarian/vegan restaurants are popping up. Vegetarian/vegan food done right is actually very yummy. I recommend the Moosewood cookbooks. I can't find the cookbook I love that I got at Barnes & Noble 10+ years ago. It's really good. Pinterest has some good recipes, too. Happy cooking! Cooking
