How did you get started?
I opened in July 2000 with the intention of bringing locally grown, organic food to the plates of a community that was lacking options for vegetarian and vegan food sourced responsibly.
I spent time traveling the California coast and was enamored with all the fresh local food and healthy vegetarian cuisines like that of Greens in SF. After managing the vegetarian deli at Open Harvest, I knew I could set off on my own.
I began selling vegan baked goods at the Farmer's Market and quickly developed a following. The following year I opened a store front.
Where are you located?
We are located in the historic haymarket district of Lincoln, Nebraska
What are your specialities?
We specialize in vegan and vegetarian sandwich wraps made with ingredients that are locally sourced, organic and Non-GMO.
We also feature small batch, hand crafted vegan and gluten free baked goods such as muffins, scones and cookies. all made with organic and non-GMO ingredients.
We are currently undergoing certification as the first Non-GMO restaurant in the Midwest.
What's your personal favorite thing on the menu?
Avocado Melt! Hands down!
It was voted best sandwich in Nebraska by Food Network Magazine!

Where else should we visit in your area?
The Mill- a locally owned coffee shop that has been a long time fixture in the Haymarket district. Cozy, laid back atmosphere and they roast on site.
Haymarket Yoga and Pilates- located just above the café. Perfect union of health, feeding the mind, body and spirit!
Do you host any special events?
We will host farm to table discussions in the spring. An informal gathering where the diners can meet the producers and engage in farm to table discussions and sustainable food policy.
Is there anything else you'd like us to know?
Our community has so much heart! It is truly a joy to be able to serve others. I feel so blessed to have the opportunity to serve healthy food and nourish this community
