Cook a Creamy Mac & Cheese Sauce and Turkish Chopped Salad with Fresh Thymes Eatery in Boulder, Colorado.


How did you get started?

I have 25 years of experience in food and beverage, from operations, to culinary instructor for Bauman College - school of Holistic Nutrition and Culinary Arts, to Head Chef for the Growe Foundation - implementing garden to classroom programs in the Boulder Valley School District.
After many years heading Bauman's culinary department and having a private clientele that I would assist in dietary transitions as a means to achieving greater health, I decided I would open Fresh Thymes Eatery. My goal is prove that eating holistic healing food that is locally sourced can also be delicious, crave worthy and appeal to every eater, from the conventional eater to the severely dietary restricted eater. I wanted to prove that allergen friendly, ingredient conscious food was not some weird diet that "other people" ate, but could be food that everyone would appreciate and seek out.

We are located in Boulder, Colorado

What are your specialities?

Gluten free, allergen conscious, ingredient conscious, local and organic food that has no GMOS's, hidden refined ingredients, no refined sugar, starches, gums or fillers.
Just real food that's really clean and delicious.

What's your personal favorite thing on the menu?

Right now we are really into kelp noodles as they satisfy a number of our criteria for getting on the menu - they are a sea vegetable which is super healthy, they are grain free, paleo, and vegan. We use them in our Mac and Cheese - which is a vegan dairy free cream sauce, and also our "Rad Thai" - which is a spin on a pad thai. It's a spicy tahini sauce, asian slaw and grilled chicken that has been marinated in basil, cilantro, parsley, mint, ginger, garlic and lime juice.

What's on the stereo?

We play all kinds of unique fun music, from Caravan Palace, to Bluegrass, to Reggae and Indie

Other places are also doing unique food - my other favorite is Shine Gathering Place

Do you host any special events?

We do! We host farm dinners that feature ingredient conscious food - there are a lot of those diners who consider themselves foodies! We also host Conscious Cleanse dinners and events celebrating ingredients we love and use such as raw local honey to raise awareness of bee decline or bitters to highlight their nutrient density, why we should include bitter foods in our diet and gather small food producers who are making artisanal bitters and bitter elixirs.

Is there anything else you'd like us to know?

We also one a handful of restaurants in the country that utilize a "community supported restaurant" model of funding. We accept new CSR members yearly on our anniversary - and members get a return on their investment in Fresh Thymes in the form of free food over the course of a year. They receive more in food than they give us in capital investment.
It helps us fund projects, big purchases and helps our cash flow in slow off season months. It also brings together our community of customers who show their love and support for our unique food concept by buying into our future success.
