We head under the streets of London to learn how to bake lamingtons with the Attendant, a trendy cafe in a refurbished Victorian toilet:

How did you get started?

My friend Ben and I found this site by accident in early 2011. When we looked downstairs with the agent we thought it would be really cool to see if we could turn the old victorian toilets into a smart cafe. We had not been looking for a site, we just thought it would be fun to try and create something amazing out of nothing and that's what we did - we opened the doors
on Feb 18th 2012.

Where are you located?

We are located in Fitzrovia, London about a five minute walk form Oxford street.

What are your specialities?

At attendant we make a single origin cold brew coffee, which is perfect for summer. We also make smashed avocado on sour dough with feta, rocket, chillies and lime which is available for breakfast and lunch.

What's your personal favorite thing on the menu?

For me it would have to be the salted caramel brownies by Batch Bakery… they are incredible, and the avocado on toast!

What's on the stereo?

At this very second we are playing… John Legend the baristas choice.

Where else should we visit in your area?

The area is quite residential, but there are a lot very popular coffee shops and restaurants all independently owned. The good thing about this area is there are no chain cafes or restaurants which makes the area very unique.

Do you host any special events?

We have been apart of a few coffee pop ups for events like habitat recently and we host private functions at the venue also.

Is there anything else you'd like us to know?

We offer all day breakfast on the weekends which is delicious, we made vanilla bean dipped French toast with mascarpone, fresh berries topped with maple syrup and a Huevos Rancheros which is a Mexican breakfast with chilli tomato stew, eggs, avocado and blackened frijoles served on wholemeal tortilla topped with creme fraiche.
